Is evaporated cane juice the same thing as sugar "in the raw"?

Inspired by my quest to find out how to make the perfect gluten free flaxseed muffins. I've been buying them but they're EXPENSIVE and I'm at the point where I'm ready to experiment. Does anyone have any recipe recommendations?

I was recently out of state and had Thai food for the first time, specifically Pad Thai and I loved it. I realized once I got back home there were no Thai restaurants so I figured I would try to find a good recipe. Every recipe I have found is very, very different and I have no idea where to begin, or which to try. On top of that, I would have to order some of the ingredients online as no store here sells tamarind paste.

Short of finding a good recipe and ordering the ingredients online, I have tried a few different boxed ones - none of which taste anything at all like the Pad Thai I had.

Does anyone know a GOOD boxed Pad Thai, or a recipe you know is really good?

So my Mom bought this:

And gave it to me. I never buy this because it always seems to come out very tough and dry, but I am on a very tight budget and can't bear to waste food. It is too hot to use the stove and so I was wondering if I could cook it in the crock pot? Any recipes/advice on how I should do it so it comes out tender and taste good?

A while ago, I read somewhere you could just melt nutella for a chocolate fondue. I wanted to try this, but after checking on the internet, every recipe says to also add (whip)cream  to the (melted) nutella. Is this really necessary? If we'd just melt the nutella without adding the (whip)cream, will it still be good to use as chocolate fondue?

This is a question for people who are familiar with a gluten-free diet:

I'm beginning to think I have some kind of gluten intolerance, so I'm trying a low-gluten diet for awhile. I'm kind of stumped on breakfasts, though, because I usually have toast. Today I'm having an orange and some yogurt, but someone told me that's mostly sugar and I'll be hungry again very quickly without some protein. Eggs aren't a great option because I don't usually have time to cook in the morning.

Can you give me some suggestions for some low gluten or gluten-free breakfasts that would be quick and easy?

I was taking a lovely spring drive yesterday and I found a place selling local honey! It's close enough to my house that the bees could have visited MY FLOWERS, which I find delightful. I tasted it and it is amazing.

What should I make with it? I will use it for my tea, of course, but do you have any recipes for baked goods that involve a lot of honey / really let the taste of the honey shine through?

A couple weeks ago, my husband and I picked up two bags of marshmallows and two of Hershey's squares, figuring we'd do something with them (not S'mores, though). However, they've just been sitting on the table. not being baked into anything delicious!

What should we make? Cookies, pie, bars? What would you do with a bunch of marshmallows and chocolate?

My CSA has loaded me up with preserves that are stunning and I want to do more with them than toast & sandwich enhancement. Your suggestions for things to cook (or even simple pairings) incorporating any of the following, please?
-- watermelon jelly
-- spiced beer jelly (great w rotisserie chicken + skin in a sandwich, for example)
-- strawberry balsamic jam
-- habanero jelly
-- caramelized onion jam
-- spicy pumpkin ginger sauce (CSA leader said he stir fried tofu in it w great success)

I eat fish & eggs but am otherwise veganish. Happy to use 'em on other people, tho, if your ideas sound delish.

We just finished carving our pumpkins. I sorted out the seeds and am left with a bunch of orange gook that I know is edible. I'm not one for wasting, so what are some good (and easy) pumpkin recipes? Also, for pureeing it, does it need to be cooked or steamed first?

ETA: Hmmm... consensus says the stuff in normal carving pumpkins is gross. Okay, I guess I will toss it then. Definitely baking the seeds though. Thanks, guys!

Do you like to bake? Do you like to futz with recipes? What was the last item you baked? Was it from a mix, or from scratch? How did it turn out?



Tonight, I made apple spice muffins. It was from a mix from Trader Joe's. It was supposed to make a loaf of bread but I made it into muffins instead. I mess with recipes a lot, generally adding extra ingredients. I used canola oil instead of butter, and added chocolate chips to half the muffins. In retrospect, butterscotch chips would have been better, if I had them on hand. They turned out pretty good. However, the muffins stick to the paper cup a lot more than I'd like. I'm not sure why that happened, maybe I over cooked them by a minute?

How do you prepare and cook your steak (or chicken, or pork chops, or whatever)?

Be more specific than whatever method is used to actually cook the meat (i.e. "grill it"). Tell me if you marinate it, if so in what and for how long, what seasonings you use, etc. Any methods you have for making the best piece of meat ever, etc.

(I'm trying to learn how to cook meat that is tolerable without being slathered in A1.)

What's your favorite way to doctor up a bowl of ramen?

Personally, I like to make a bowl of Nissin or Maruchan Chicken flavor, and pop in a little container of that salsa you get from El Pollo Loco. Sounds nuts, probably is... but it's delicious.

Dragoncon is fast approaching. Hooray!

This means I need to start on the Alcohol Menu. I'm already planning on making Jolly Rancher vodka and probably several varieties of Jello shot.

What other types of fun alcohols should I prepare?! I was thinking of maybe some infusions, but wouldn't know where to start...suggestions?

Also, what mixed drink do you think would make a delicious Jello shot? Don't worry about HOW it would become a Jello shot, just...whatever sounds like it would be good. I'm tired of the things I always make and want to challenge myself to invent a new Jello shot.

I need to bring a dessert to a potluck next week, and I found two cans of coconut cream in my pantry. I have tried looking up recipes, but I was allergic to coconut since I can remember up until a few years ago, and it still tastes like fear and pain to me so I can't really judge if something looks appetizing.

So I made Chatham Artillery Punch for a party a little while back.. and now I'm left with about $20 worth of shitty Gin, Brandy and Rum.

I've been eating almost nothing but quesadillas and pico de gallo since I moved in with a friend last Thursday. Obviously, not the most well-balanced diet, but my usual cooking utensil (read: microwave) is not available.
